Stellar IPA

BeerAfter last years IPA, I wanted to improve on the flavor, taste, gravity and IBU. This IPA will be stellar. I mashed this thing for the longest time ever, 2.5 hours, and I think I got everything I needed from it.Mash the following grains for 2.5 hours at 151°F:(or until the starch test passes)
  • 23 pounds 2 row Marris Otter Pale Malt.
  • 2 pounds 40? Crystal Malt
  • 1 pound Cara-pils
  • .5 pounds Special B Malt
After mash is done, bring to boil. Boil time is 90 minutes.
Add bittering hops for 90 minutes of the boil:
  • 2 oz Cascade Hops 6% alpha
  • 8 oz Malto Destrine
  • 11 oz Lyles Golden Syrup
After 30 minutes, add the following hops for the remaining 60 minutes of the boil:
  • 1.5 oz Centennial Hops 8% alpha
  • 1 oz Cascade hops 6% alpha
With 30 minutes remaining for the boil, add:
  • 1.75 oz Centennial hops 8% alpha
With 15 minutes remaining for the boil add:
  • 1 oz East Kent Goldings 4.7% alpha
  • 2 tsp Irish Moss
With 1 minutes remaining for the boil, add:
  • 1 oz East Kent Goldings 4.7% alpha
Remove from heat, cool wort below 80?F and transfer to primary carboys. Pitch yeast:
  • Wyeast 1275 Thames Valley Ale
Follow your own fermentation and clearing guidlines to your taste.

After primary fermentation, transfer in to secondary and dry hop for two weeks:

  • 2 oz Cascade Hops 6% alpha
OG1.076
FG 1.018
ABV 7.6%
IBU 66.8
Yield10 Gallons
